Post Holidays Simplicity


After the hustle and bustle of the Holidays and my Birthday, my mom and I take some time to recover and eat more simply.  And a quick, easy and healthy meal we like to conjure up is a Tostada!  We used to fry the tortillas to get them extra crispy... restaurant style.  But I've figured out a way to get them just as crunchy without floating them in a vat of oil!  

What you'll need: 

Corn Tortillas
Green Leaf Lettuce
Tomatoes
Cheddar Cheese
A can of Refried Pinto Beans
Salsa
Pam Spray


To make the tortillas crispy, spray each side of the tortilla lightly with Pam!  Place them on a foiled baking sheet and stick in a 400 degrees oven for about 15-20 mins.  Just when you think the tortilla might be too brown, that's when you take them out!  If there are still some yellow spots left, you will not find the crunch.  This method works just as well as frying them but is sooo much better for you!  

Cut up the lettuce and tomatoes and grate the cheese.  Warm up the beans on the stove with a low flame so you don't burn them.  Pile them all up on your now crispy shell, top it off with some salsa and you've got yourself a tasty Tostada!

  2. oh i so understand the need to eat more simply after the holidays. after all of the rich heavy ( undeniably delicious) cooking, my body's actually been craving some goos wholesome veggies! haha that torta looks perfect! and so easy to make. thanks for sharing. might have to try that very soon.
