A Side of Squash


We are right in the middle of Acorn Squash season and what better way to showcase this colorful veggie than by making it your main side for a nice winter meal.  My mom grew up watching my Grandma Jo prepared hers by filling the center with milk, butter, salt and pepper.  So the other night, I came home to find just that!  The milk is the key ingredient here, because it adds just the right amount of sweetness to the squash and creates a creamier texture. 

What you'll need:

Acorn Squash cut in half
 1/4 cup milk*
1 Tbsp unsalted butter*
Pinch of salt*
Pinch of freshly ground black pepper*
 * for each half

Place your two halves of squash on an oven safe platter, fill the middle of each half with all the ingredients, pop it into a 400 degrees oven and let it bake for about 45 mins or until the squash has soften.  Mix up the now melted ingredients together with the flesh of the squash and eat!
